Trifolin is a dihydrochalcone glycoside belonging to the category of flavonoids. It is a light yellow crystalline powder with no hygroscopicity. It is easily soluble in hot water and slightly soluble in cold water, with a sweetness 300 times that of sucrose. The sweet taste is refreshing and pure, with a weak tea flavor and aftertaste, which can enhance the unique flavor of food.
